Basics Foundation Class

This class is suitable for beginners and those who wish to improve their existing skill set.

In this class you will learn:

Add flavour to layers

Make Swiss Meringue Buttercream to fill sponge

Make White Chocolate Sponge to cover cake

Achieve a smooth finish using Ganache

Cover cake in icing and achieve sharp edges using two different methods (one using a dummy cake)

Macarons

In this class you will learn how to make Macarons using the French Method.

This includes:

Learning how to make sturdy and full shells

How to mix the batter correctly to ensure it pipes correctly

How to correctly rest shells prior to baking

How to prepare fillings for macarons

Troubleshooting any issues that may arise

Peony flower (Sugar)

(Hydrangea's and Foliage will be included if time allows)

Creating the perfect stamens and colouring them where necessary

How to create different layers of petals, how to vein, wire, shape, dry and attach to the stamens

Focusing on creating movement and character with different layers of petals

How to make a full and fluffy peony

How to attach to a cake and use the petals to create a full peony shape

If time allows, creating sugar hydrangeas and eucalyptus foliage.

This will include cutting, veining and shaping the petals.
